Ingredients
Scale
- 2 medium zucchinis, sliced into 1/4-inch rounds
- 1/2 cup Panko breadcrumbs
- 1/4 cup grated Parmesan cheese (optional)
- 1 large egg, beaten
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Olive oil spray or cooking spray
Instructions
- Preheat your air fryer to 375°F (190°C).
- Slice the zucchinis into 1/4-inch thick rounds and pat dry with a paper towel to remove excess moisture.
- In a shallow bowl, combine Panko breadcrumbs, Parmesan cheese (if using), garlic powder, paprika, salt, and black pepper.
- Dip each zucchini slice into the beaten egg, allowing any excess to drip off, then coat it in the breadcrumb mixture, pressing gently to adhere.
- Arrange the zucchini slices in a single layer in the air fryer basket, ensuring they do not overlap. Spray lightly with olive oil or cooking spray.
- Cook for 8-10 minutes, flipping halfway through, until golden brown and crispy.
- Remove from the air fryer and serve immediately with your favorite dipping sauce.
Notes
- For a gluten-free option, use gluten-free breadcrumbs.
- Want a spicier kick? Add a pinch of cayenne pepper to the breadcrumb mixture.
- To make zucchini chips instead of rounds, slice the zucchini thinner and reduce cooking time slightly.
