Ingredients
- 1 tbsp olive oil
- 1 small onion, diced
- 1 carrot, peeled and chopped
- 1 celery stalk, chopped
- 2 cloves garlic, minced
- ½ tsp salt (adjust to taste)
- ¼ tsp black pepper
- 4 cups broccoli florets
- 1 medium Yukon Gold potato, peeled and diced
- 4 cups vegetable broth
- ½ cup unsweetened dairy-free milk (optional, for extra creaminess)
- 1 tbsp lemon juice
- 2 tbsp fresh parsley, chopped (plus more for garnish)
Instructions
- Sauté the Aromatics – In a large pot, heat olive oil over medium heat. Add diced onion, carrot, and celery. Sauté for about 5 minutes, until softened.
- Add Garlic & Spices – Stir in the minced garlic, salt, and black pepper. Cook for 1 minute, until fragrant.
- Simmer the Vegetables – Add the broccoli, potatoes, and vegetable broth. Bring to a gentle simmer and cook for 15–20 minutes, until vegetables are tender.
- Blend Until Smooth – Use an immersion blender to puree the soup until silky smooth. If you prefer a chunkier texture, blend only half of it. If the soup is too thick, add extra broth or dairy-free milk to adjust consistency.
- Finish with a Bright Touch – Stir in lemon juice and fresh parsley. Taste and adjust seasoning as needed.
- Serve & Enjoy – Ladle into bowls and garnish with extra parsley. Serve warm with crusty bread or a side of cooked quinoa for a heartier meal.
Notes
✅ Make it Creamier Without Dairy – Blend in extra potatoes or add a splash of dairy-free milk for a richer texture.
✅ Thin Out the Soup – Stir in more vegetable broth or warm water until you reach the desired consistency.
✅ Boost the Flavor – A pinch of nutmeg or lemon zest adds extra depth without overpowering the broccoli.
✅ Storage & Meal Prep – Store leftovers in an airtight container in the fridge for up to 4 days. Reheat gently, adding a splash of broth if needed.
Enjoy your healthy, creamy, and delicious broccoli soup! 🥦✨
